Asseo’s career began in 1982 after graduating from L’École Oenologique de Mâcon in Burgundy. He established Domaine Courteillac in Bordeaux, adding Château Fleur Cardinale in Saint-Émilion and Château Robin in Castillon. Over 15 years, he developed a reputation for precision and quality, yet he longed for more freedom than AOC law would allow. In 1996, his search for a new winemaking home took him across the globe before he discovered Paso Robles.
The Paso Robles terroir
On the west side of Paso Robles, Asseo found the conditions he had been seeking. The rolling hills of the Santa Lucia Range, the calcareous soils, and the cooling influence of the Templeton Gap provided the perfect environment for ambitious blends. At L’Aventure, he planted mainly Syrah and Mourvèdre alongside Cabernet Sauvignon and Petit Verdot. Flagship wines such as Optimus, Estate Cuvée, and Côte à Côte showcase both Rhône power and Bordeaux structure.
Winemaking approach
At L’Aventure, every detail is considered. High-density planting and low yields ensure fruit concentration, while hand-sorting, small-lot vinification, and ageing in French oak preserve quality and character. The result is intense yet refined wines, earning critical acclaim and establishing Stephan Asseo as one of Paso Robles’ most influential winemakers.
