Description

It is a delight to showcase the immensely talented brewers at Tatenokawa with this beautiful sake. This brewery combines a forward-thinking attitude to furthering the boundaries of sake production with a healthy respect for the traditions of their beloved Yamagata Prefecture.

Their sixth-generation president, Sato Junpei, led a project to revive an almost extinct heirloom rice variety named Soube Wase, and it is from this elegant and exceptionally rare rice that they have chosen to brew their encapsulation of 2023 for us. This will show beguilingly soft sweetness in youth with umami broadening and balancing as it sits in the cellar.
