Description

This, the second vintage sake produced for us by legendary master-brewer Noguchi and his team shows the wisdom gleaned from patiently watching over seventy such cycles of seasons pass. Three constituents were chosen to marry together and create their truest expression of the vintage. In addition to two sakes brewed from the revered Yamadanishiki rice, this contains sake brewed from Omachi rice too from the more southerly Okayama prefecture.

This rice sweltered under a particularly hot summer and gives a wonderful savoury leaning to the whole. Upon release, I expect this 2023 to feel a shade drier than the previous vintage yet still retain all the succulent aromatics this brewer is famed for. With age a contented, gentle richness will develop. Either youthful or mature, this could be an ideal sake to slake the thirst on a hot summer’s evening reminiscing about warm nights long ago.
