Description
Few Champagnes have a story as compelling as Château d’Avize, yet it remains little known. We believe the latest vintage marks a turning point. In a tasting of all four releases, the 2015 stood out for its perfect balance, showcasing Hervé Jestin’s mastery in expressing this unique terroir.
This 2.1 ha single vineyard, planted with Chardonnay in 1968, lies in the heart of Avize Grand Cru—renowned for broad, richly textured Chardonnay. Château d’Avize is one of the few true Châteaux in Champagne and the only one in a Grand Cru. By law, the term “Château” requires estate-grown grapes and complete vinification on-site.
Hervé, a pioneer in biodynamics and bioenergetics, sees nature as the true winemaker—his role is simply to guide. With over 300 million bottles produced in his career, his humility and insight continue to influence leading estates, including our own at Hambledon.

9 years on lees; disgorged January 2025, dosage 2.3g/l.
This farming is organic, yields naturally very low, and the vines and winemaking follow Hervé Jestin’s unique biodynamic approach. Fermentation and ageing occur in 2nd fill (Château d’Yquem) barrique, where the wine remains in oak for 9 months, gaining depth and richness before secondary fermentation in bottle from June 2016.
White gold in the glass, with the finest mousse, the nose plays with exotic fruit, golden edges of patisserie, and sweet floral essences reminiscent of royal palace gardens. The palate is deeply complex, with stone fruits pierced by autumnal spices, and divine textures poised against the geological chalky tension of Grand Cru Blanc de Blancs.
