IWA 5, Assemblage 2 (2020), Shiraiwa K.K. Brewery, Toyama Prefecture, Sake
- 15% alcohol
- Sake
Description
Given the unique challenges presented by the pandemic, Richard Geoffroy was in lockdown at home in France when A2 was produced, and so all the base sakes had to be shipped from Japan to him so he could create the final blend. I was astonished by how many tropical aromatics leapt from the glass on the first assessment, with notes of banana, mango, yuzu and some nectarine coming through.
The palate feels beautifully soft, with notable umami character but underpinned by citrus acidity, salinity and some white pepper on the finish. A coating mouthfeel but not cloying. All feels very well integrated and in harmony. Whilst still a young project, this feels like a sake that will age gracefully. Drink now and over the coming 4-6 years, and potentially beyond.
