Description

Le Soula Blanc, the domaine's flagship white, blends Sauvignon Blanc, Vermentino, Grenache Blanc, and Macabeu. Nestled within 53 hectares of Garrigue, the vineyards embrace biodynamic principles, with vines ranging from 25 to 60+ years old. Following traditional vinification methods, such as whole bunch pressing, cold settling, and spontaneous fermentation with natural yeasts, the wine undergoes a maturation period of 22 months. This takes place in a combination of demi-muids (60%), new oak (28%), and tank (12%) before undergoing a light filtration. The result is a wine with complexity, finesse, and unmistakable purity.
