Toku sake is made at one of the oldest breweries in Asahikawa – Japan’s coldest city – in Hokkaido. Winter temperatures here regularly fall to -20°. The water for Toku’s sake production is sourced from the Daisetsuzan mountain range and the rice is highly polished Yamadanishiki. For purity, the rice is fermented in freezing conditions. The result is a beguilingly fresh sake with beautiful texture and a crisp hint of its wintry creation. Guided by the seven virtues of Samurai moral code, Toku means virtue in Japanese.
