Description

This little-known lieu-dit faces south and sits high on the slope within Vaillons. Sébastien’s vines here are 60 years old. The wine is made in a concrete egg, giving many of the benefits of oak-ageing without the wood character. It offers an appealing mix of creamy orchard fruit and sizzling mineral freshness, while the finish is long, layered and chiselled.

This is aromatically very similar to the Vaillons but with a phenolic character olive oil nuances). There is even better volume to the rich, generously proportioned and punchy medium-bodied flavors that terminate in an impressively persistent if mildly rustic finale.

The fruit is a component of that used for the Vaillons bottling, but enough is kept separate to fill a 16hl concrete egg for vinification and ageing. Pale colour, less evident fruit on the nose, more restrained. Stricter all the way through, a touch gravelly in the middle, with a more restrained finish, notably Chablisian.
