Description

Thibault buys the grapes for this cuvée, from a monopole surrounded by a 2.5-metre-high wall. Unusually for Savigny, the dominant component in the soil is limestone, so the wine is tight and zippy. There is 30% Pinot Blanc which adds a sense of lemon oil. Thibault favours a long fermentation to protect against later oxidation and to add a touch of austere bitterness to the finish. This is an exciting and very individual interpretation of the appellation.

The Savigny was late to finish its fermentation, in the summer with a complex bouquet because it hasn’t yet quite settled down. Also perhaps because of 30% pinot blanc in the blend. Perfumed apples and quinces.
