Description

Arguably the best value for money in Chablis, if not all of Burgundy, this comes from two hectares in the Paradis lieu-dit. As the name suggests, it sits above a quarry; the vines are planted directly on limestone. This year, it fermented very slowly, for almost a year, which Didier feels has brought extra complexity and precision. This is an absolutely stunning wine and perhaps the best vintage we have tasted of it yet.

Chablis

Chablis lies further north than the rest of Burgundy, located about halfway between Beaune and Paris; it’s actually not all that far from Champagne. The wines here – exclusively whites from Chardonnay – differ in style from other white Burgundies: they tend towards steeliness and flintiness.
