Description

Produced from 60- to 80-year-old vines, this cuvée was fermented in barrel before being racked into stainless steel. There is a savoury edge to the nose, alongside fresh white fruits and subtle vanilla. There is 15% new oak here. This will be bottled a little CO2 for freshness and protection, allowing them to use less SO2 – a new development led by next-generation Théo. This is lively, energetic and very refreshing, with a peppery kick at the end.
