Description

This is typically the most open of Guillaume’s wines, and the 2022 was bottled in early August. This is very classically Chablis in profile, with lemon-and-lime fruit and a pronounced iodine and oyster shell character. There is a delicious thread of acidity that gives a stringing freshness to the finish.

A pretty mid lemon yellow. Some fresh citrus infuses the nose. A bit of grapefruit, this is almost old fashioned in its aquiline style. The stones are in control, with an iodine wash at the finish.

Touch of spice, crunchy fruit, less multi-dimensional than others in the Louis Michel range at the moment, but there is certainly potential for development. Needs 12 months but then likely to be an early drinker after that. Quite tight and closed currently, Michel's Vaillons had only very recently been bottled.
