Neal Martin 88-90/100

The 2020 Chablis Vaillons 1er Cru comes from several parcels, each picked and fermented separately and then blended just before bottling. This is usually one of Deplessis’s richer cuvées, although I find it quite closed at the moment. The palate is more vibrant, offering fine acidity and salinity, moderate depth and a simple finish that just needs to develop a little more weight and concentration. A bit timid at the time of my visit.

Pale primrose colour, with an elegant floral nose hiding the steel behind. There is some good tension here, a light youthful bitterness, very salivatory. The wine comes across a little hidden behind the power of Mont de Milieu, but it is all there.
