Description
South-facing ancient escarpment in Appledore, Kent. Predominantly clay and sandy loam soils with a warm and dry microclimate and close proximity to the coast. Whole bunch pressed and naturally settled for 24-36 hours. Fermented in temperature-controlled stainless steel tanks with a small percentage fermented in old oak barrels for complexity. Bottled in June 2014, with 90 months lees ageing. 68% Chardonnay and 32% Pinot Noir. 8.0 g/l residual sugar.
Tasting note
With 7.5 years of lees ageing, this has beautiful patisserie notes but retains layers of sweet tropical fruits. Pineapple, mangos, and Amalfi lemons make up a refreshing wine with baking spices that develop with time on the palate. The 2013 Brut Reserve (Late Disgorged) has maintained a vibrant freshness given the time spent on lees, which is a testament to the quality. It is incredibly enjoyable with a selection of different seafood plates or as an aperitif.

Critics reviews
Really lovely creamy and fresh apple aromas – great concentration and lively acid. It is still very, very young – not much autolysis on the nose – but the palate finishes with a very classy, bready character. The purity of fruit is a thing to behold!
Lovely golden colour with a powerful nose of ripe orchard fruits, spice and brioche. Still youthful with great complexity and richness balanced by superb freshness. A thriller of a wine!
