B-Corp certified, Westland Distillery in Seattle Washington are experimenting with every facet of whisky production, in this case, exploring oft-forgotten barley varietals in their Colere range. Around 3,000 bottles of this have been produced, made from the Talisman barley varietal, a two-row winter barley, descended from the highly regarded Marris Otter variety. Ageing in re-used barrels lessens the oak impact and allows the grain to shine. I find icing sugar, hints of citrus and golden syrup and a lovely chewy maltiness on the finish.
