B-Corp certified, Westland Distillery in Seattle Washington are experimenting with every facet of whisky production, in this case, using a unique, local species of oak for maturation in their Garryana range. Of this, 5922 bottles have been produced. This sixth edition showcases the rich spice of the Oregon white oak, alongside casks that have previously held Pedro Ximénez Sherry and apple brandy. It’s wonderfully heady, full of savoury wood spice and notes of clove, cassia and crème brulée. A drop of water brings some dried berry to the fore.
