Jeb Dunnuck 2000: 100/100

Just a powerhouse of a wine that does everything right, the 2000 Château Pavie is drinking incredibly well today, offering huge blackcurrant and chocolatey darker berry fruits as well as loads of truffly earth, tobacco, and spice. Full-bodied, deep, and concentrated on the palate, it stays flawlessly balanced, and while I suspect the acidity is quite low, it has an incredible sense of freshness and a weightless texture. Fully mature, yet in the early part of its drink window, it has another two decades or prime drinking ahead of it.

Deep garnet-purple in color, the 2020 Pavie sashays out with flamboyant notes of black and red cherries, black raspberries, and juicy plums opening out to fragrant underlying scents of forest floor, Sichuan pepper, and rose oil plus a hint of lavender. The medium to full-bodied palate is tightly wound and super-intense, delivering very fine-grained tannins and beautiful tension, finishing long and minerally. This is gorgeous!

Just beginning to come around and strut its enormous potential, this wine at age 15 has been evolving like a glacier. The wine has an inky, opaque, plum/purple color and a stunningly rich nose of mulberries, bramble berries, blackberries, licorice and incense as well as touches of toast and graphite. Fabulously concentrated and full-bodied, with a multidimensional mouthfeel, this profound Pavie is in mid-adolescence. It should evolve and continue to drink well for at least another 30-40 years. This is clearly the first compelling effort made by the Perse family.

The 2010 Château Pavie is straight-up magical, and while it matches the 2000, 2005, 2009, and 2015, it has a style all its own. It’s probably most similar to the 2005, yet even more tannic and backward.) Checking in as blend of 70% Merlot, 20% Cabernet Franc, and the rest Cabernet Sauvignon from tiny yields of 26 hectoliters per hectare, it’s still ruby/plum-colored and has a powerful, inward bouquet of blackcurrants, smoked earth, graphite, chocolate, and white truffle. Deep, powerful, and massive on the palate, yet also incredibly delineated and focused, it’s shed just a touch of the baby fat it had in its youth and still needs another 4-5 years to hit prime time. Given its depth of fruit, flawless balance, and both purity and freshness, it’s going to be a 75- to 100-year wine.

What fun, excitement and joy it will be to compare the four perfect wines Perse has made in 2005, 2009, 2010 and, of course, the 2000, in 25 or so years. This wine is truly profound Bordeaux. Everything is in place – remarkable concentration and a beautiful nose of cedar and ripe blackcurrant and blackberry with some kirsch and spice box in the background. Lavishly rich, with slightly more structure and delineation than the more Rabelaisian 2009, this wine does show some serious tannins in the finish, and comes across as incredibly youthful. Of course, it's five years old, but it tastes more like a just-bottled barrel sample than a 2010. In any event, this wine is set for a long, long life and should be forgotten for at least another decade. Consume it over the following 75 or more years.

Pure perfection in red wine, the 2020 Château Pavie checks in as 50% Merlot, 34% Cabernet Franc and the rest Cabernet Sauvignon, all raised in 75% new French oak. Absolutely incredible in every way, it has a sensational bouquet of crème de cassis, smoked tobacco, chocolaty oak, graphite, white truffle, and hints of flowers. Pure, full-bodied, and concentrated, with perfect integration of its fruit, oak, and tannins, it's one of those wines that needs to be tasted to be believed. Hats off to the Perse team for not following trends and for continuing to make a truly Grand Vin that offers a rare mix of power and elegance. Give bottles just 4-5 years and enjoy over the following three decades.

This opens up on your palate like a butterfly. It takes your breath away. Purity of blackberry, raspberry and black cherry. Lavender. Very, very impressive. Full and chewy with tight and polished tannins that go on and on. Energetic and structured. Crisp and vivid. Superb finish. Better after 2029 but a joy to taste.
