Highland Park, Viking Heart, 15-Year-Old, Island, Single Malt Scotch Whisky (44%)

This 15yo whisky from Highland Park’s core range shows perhaps the lightest touch of oak. One delicious consequence of this is an unencumbered vibrancy, that stems from the heather-derived peat used to malt the barley. Whilst this whisky is far from the smoke-soaked monsters of Islay, it might be about as primal as this marvellous Orcadian distillery gets. Those vibrant flavours, coupled with touches of dried fruit, make for an utter delight alongside oily fish dishes.
