Domaine Caire-Devèze is a rising star in Puligny-Montrachet. Since taking over from his uncle over a decade ago, François Caire has turned this six-hectare estate into a source of elegant, terroir-driven Chardonnay. The debut 2022 vintage sold out rapidly; the 2023s build on that success with ripe orchard fruit, mineral precision, and the trademark tension of great Puligny.

Vineyards and sites

All six hectares of the domaine’s vines lie within Puligny-Montrachet, from Aligoté to prized Premier Cru sites. When François Caire assumed control, he shifted from selling most of the crop to producing the estate’s own cuvées, quickly building a reputation for quality. Holdings include the lieux-dits Les Levrons, Corvée des Vignes, and the celebrated Premier Cru Les Folatières. The domaine’s limestone-rich soils and cool climate deliver freshness, tension, and aromatic finesse. François also continues to sell grapes to Kei Shiogai, Burgundy’s Japanese rising star, underlining the calibre of his fruit.


Winemaking

All wines except the Aligoté are aged in French oak for 12–18 months, with around 25% new barrels. This gentle élevage brings texture and depth while preserving Chardonnay’s clarity and elegance. As Jasper Morris MW notes, “François Caire is proceeding slowly to be sure of mastering each step… There is potential here, doubtless to be fine-tuned in future vintages.”
