Description
Gozenshu 1859 is dedicated to experimentation with Okayama’s heirloom rice strain, Omachi. New Mountain is the pasteurised version of Prototype, it has also gone through Roka (secondary filtration) and Mizuwari (balancing with water) stages to produce an approachable, mellow, satisfying and hugely enjoyable brew. New Mountain is round and expressive, boasting an exceptional balance of sweetness, acidity, and umami, enhanced by a luscious, juicy texture.
Ripe, rounded flavors of green banana, guava, brown sugar, yogurt, and sweet steamed rice unfold elegantly. The beautifully prolonged finish tapers into a delightful fusion of spicy, fruity sweetness. Its well-balanced acidity makes it an ideal companion for rich or fatty dishes, such as Indian curries, deep-fried delicacies, and mature cheeses.
