Description
Kamoizumi Shuzo is noted for its dedication to producing pure, unpasteurised sake made from the robust strains of sake rice native to Hiroshima. Red Maple embodies all these features, adding two years of ageing to increase the aromatic complexity. The result is a rich and powerful sake with aromas and flavours packed with dried fruit, honey and citrus peel, a super-creamy texture and lots of both umami and freshness.
This brew would be an excellent match for meat dishes or hard cheeses but may be at its best as a ‘sipping sake’ enjoyed on its own after a meal. Whilst this may seem an unusual sake proposition, it makes perfect sense when you taste it – complex, powerful and elegant.
