Description

This is a blend of five well-regarded parcels, split almost 50-50 between the left and right banks of the Serein. It’s fermented and raised entirely in stainless steel to preserve freshness. The result is a wine which marries power and freshness. There is rounded, juicy fruit, paired with a chalky, crisp finish that offers up aromas of oyster shell.

The 2022 Chablis Village, matured in stainless steel, has a pleasant, bright bouquet with yellow plum and touches of pressed flowers. Understated, but there is a sense of tension here. The palate is well-balanced with a clean, tropical-tinged entry and notes of dried quince and citrus peel. It is a little honeyed in texture, yet there is always an underlying tension to make it very appealing.

Pale in colour. The first nose is a delight, very classical yet with a juicy generosity as well as, rather than instead of the classicism), and a little youthful bitterness. Perfect marine notes at the back, with exquisite balance. This will be delicious and classic together.

Chablis

Chablis lies further north than the rest of Burgundy, located about halfway between Beaune and Paris; it’s actually not all that far from Champagne. The wines here – exclusively whites from Chardonnay – differ in style from other white Burgundies: they tend towards steeliness and flintiness.
