Description

Drawn from almost 50 hectares exclusively on Kimmeridgian soils, Fèvre’s domaine Chablis is arguably the benchmark. The vines average 40-45 years of age, their deep roots giving concentration and helping to resist the dry conditions. This is precise, mineral and saline, with the concentration of a Premier Cru.

To bottle in November. The average age is 40 year old vines, and 10% in wood. Excellent long finish. Sources are Chablis and Chichée for half and the rest in Viviers, 50 year old vines. Well drained steep slope which though south facing is at altitude and stays fresh. A fresh lemon yellow. The nose is a little more subdued than the Petit Chablis but more classical. This too has the attractive saline bitterness of extreme youth, but the fruit builds beautifully on the palate.

Distinct shellfish notes. There is plenty of volume, a fleshy sunny character on the palate, freshened by lingering salinity to finish—top example of AP Chablis in 2022. From 40ha of vines, with three distinct plots, including one from a lovely vineyard to the east around Viviers, with vines planted in the 1960s, but all of the vines have plenty of age.

Chablis lies further north than the rest of Burgundy, located about halfway between Beaune and Paris; it’s actually not all that far from Champagne. The wines here – exclusively whites from Chardonnay – differ in style from other white Burgundies: they tend towards steeliness and flintiness.
